WINEMAKING
Nick and Hamish make wines that reflect the generous climate of the
region, producing full bodied red wines and elegant, luscious white
wines.
The
emphasis is on producing fruit forward styles, that are intense in varietal
character. By
owning vineyards that surround the winery, total control is maintained
in delivering fruit in a fast and efficient manner to the winery for
processing. Wines are also stored on site for barrel maturation and
constant monitoring.
In
excellent vintage years a limited release reserve Shiraz (Eliza Reserve
Shiraz) and Cabernet Sauvignon (Punch Reserve Cabernet Sauvignon) is
also produced. These wines are picked and matured seperately from the
normal range.
Shottesbrooke constructed a state of the art winery complex in 1996
to combine the latest in winery technology with hand made winemaking
techniques.
